Roasted Chicken Recipe
Such an easy recipe to make that’s a great recipe for children to make with you (or alone if they’re old enough).
When you get home from work, quickly prep this and put it in the oven and put the rice on if you don’t have it already made. By the time you find out what the kids did in school, get rid of your work clothes, and set the table, dinner will be ready!
This delicious roast chicken recipe is basic: a start for whatever you want to try. Play around with the flavoring and make it your own ;).
- 8 pieces chicken (preferable skin on and bone-in)
- 1 tbsp soy sauce
- 1 tbsp light brown sugar
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 4 shallots (chopped)
- 2 cloves garlic (minced)
- 1 handful fresh parsley
- Salt and Pepper (to taste)
- Preheat oven to 425F (220C)
- In a large baking dish, combine marinade and toss with chicken. Season well.
- Place chicken pieces skin side up and roast for 30 minutes until it begins to brown.
- Remove and baste with marinade
- Flip pieces and bake a remaining 10 minutes or until chicken is cooked.
- Garnish with lots of fresh parsley
Serving Ideas for This Roasted Chicken Recipe
You can eat this on a bed of fried rice (use steamed if you’re trying to eat healthier). Or, with mashed, roasted or baked potatoes. Or some stir fry or roasted veggies.
My favorite roasted vegetables to accompany this chicken would be broccoli, cauliflower, carrots and mushrooms. Just toss the chopped veggies with 2 tablespoons butter or olive oil, and 2 Tablespoons balsamic vinegar or teriyaki sauce, salt and pepper. Roast in the oven while the chicken is roasting, and they’ll be ready about the same time.
The roasted chicken can be frozen too, if you want to make a larger quantity and have some for another time. Very versatile! Just use the right portion size, so it’s easy to thaw and eat.
