This can be an overnight French Toast casserole, especially good for when you’re short on time in the mornings, or have a crowd to feed and please.

However, this is quick and simple enough that you can make and eat it for breakfast, or an anytime snack or dessert too. It’s a winner for breakfast on the go too, because no syrup is needed. You have everything you need baked into it in the perfect balance of flavors and textures.

We love bananas. In fact, not only are bananas the most consumed fruit in the world, but they’re also typically the least expensive fruit.

So when the bananas on hand start to get overripe, we start making and baking this awesome recipe for banana French toast.

  • Pecans (or other favorite nuts)
  • Chocolate chunks or chocolate syrup sprinkled or drizzled over the top (or over the bread before adding the egg)
  • Peanut butter (added to the glaze before adding the bananas)

Banana French Toast Bake

This makes decent sized servings for 12, and especially if it's a side dish or dessert. Or you can cut it into 8 pieces for bigger appetites and the main entree.

Ingredients
  

SWEET BANANA GLAZE

  • ½ cup butter
  • ¾ cup maple sugar or sucanat, brown sugar or other favorite
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 5 bananas sliced

BREAD & EGG BATTER

  • 8 large eggs
  • ¾ cup maple sugar or sucanat, brown sugar or other favorite
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg or substitute with cardamon powder
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 1 cup milk
  • 1 loaf french bread (or any crusty bread on hand) cut into 1″ cubes (= about 10 cups)

GARNISH (optional)

  • Dusting of powdered sugar
  • Dollop of whipped cream
  • Drizzle of reserved glaze

Instructions
 

  • PREHEAT oven to 350˚F (180˚C).
  • GREASE 9"x13" baking dish on bottom and sides. We use coconut oil
  • CUBE bread into an 8 cup measuring cup (fill to the top for ~10 )cups, crack all the eggs into a large bowl
  • SLICE bananas
  • GLAZE – Over medium-high heat, melt butter and stir in the sugar, cinnamon, and vanilla. Simmer for a couple minutes, then add sliced bananas.
  • WHISK In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk.
  • ADD cubed bread, and gently stir until all liquid is absorbed.
  • POUR and spread the bread batter into the greased 9 x 13 inch (23 x 33 cm) baking dish.
  • SPREAD the seasoned sweet banana glaze evenly over the cubed bread and egg batter.
  • BAKE for ~50 minutes (give or take 5 minutes), until golden brown and slightly crispy around the edges and top.
  • SET – Let Banana French toast bake set for a couple minutes once out of the oven, then cut into 12 even pieces.

OPTIONAL TOPPINGS:

  • TOPPING 1- Sprinkle the powdered sugar before cutting, (or omit).
  • TOPPING 2 – If using whipped cream this is best added to each serving once plated.CUT into 12 even pieces Serve with powdered sugar on top.
  • TOPPING 3 – If using whipped cream, you may want to drizzle a few drops of banana glaze drizzle over the dollop of whipped cream.
