PREHEAT oven to 350˚F (180˚C).
GREASE 9"x13" baking dish on bottom and sides. We use coconut oil
CUBE bread into an 8 cup measuring cup (fill to the top for ~10 )cups, crack all the eggs into a large bowl
SLICE bananas
GLAZE - Over medium-high heat, melt butter and stir in the sugar, cinnamon, and vanilla. Simmer for a couple minutes, then add sliced bananas.
WHISK In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk.
ADD cubed bread, and gently stir until all liquid is absorbed.
POUR and spread the bread batter into the greased 9 x 13 inch (23 x 33 cm) baking dish.
SPREAD the seasoned sweet banana glaze evenly over the cubed bread and egg batter.
BAKE for ~50 minutes (give or take 5 minutes), until golden brown and slightly crispy around the edges and top.
SET - Let Banana French toast bake set for a couple minutes once out of the oven, then cut into 12 even pieces.
