This spinach stuffed chicken breasts recipe is absolutely AMAZING! The spinach paired with cream cheese and chicken gives this dish a great taste. It makes an easy weeknight recipe or you can cook it for guests. Serve it with some corn, green beans and rice for a complete meal.
Planned-Overs
This spinach stuffed chicken breasts recipe freezes well too. Just pack your leftovers in a freezer bag, or a freezer container and enjoy it again on a busy night.
I love it when I come home from work and can have dinner on the table in just minutes.

Or you and your family may just prefer to enjoy it several times during the week. That’s usually what we do. We don’t get tired of it since we’re cooking foods we really enjoy anyway. So for us to have enough left over to freeze, we’d be needing to quadruple most recipes rather than double them! Same for you if you have a large family.
It saves time, energy and money to double, triple or quadruple recipes for extra planned-overs to enjoy again over the week and also to have some to fresh-free for another month or so.
It’s like making your own “TV dinners” except far more healthy and delicious!
Substitutions for Spinach Stuffed Chicken Breasts Recipe
Feta Cheese
This recipe is also great with feta instead of cream cheese. You can also use whatever white or Italian cheeses you prefer or have on hand.
Spinach
You can substitute frozen spinach for fresh chopped. You can opt to sauté the spinach for 5 minutes in butter with onions and/or garlic for added flavor, or just include it fresh chopped into the blender batter.
Bread Crumbs
If you don’t have Italian bread crumbs, you can use regular bread crumbs and just add approximately 1-3 teaspoons Italian seasoning to the bead crumbs and stir to blend in. You may also wish to add 1 teaspoon of garlic salt to the crumb mix.
Gluten Free Bread Crumbs
Substitute the regular bread crumbs for gluten free Italian bread crumbs. If you can’t find the GF breadcrumbs with Italian seasoning, just stir 1-3 teaspoons of Italian seasoning or Herbs de Provence into some gluten free breadcrumbs.
Spinach Stuffed Chicken Breasts Recipe
Ingredients
- 4 boneless chicken breasts
- 1/4 cup Parmesan cheese
- 1 16 oz pkg frozen chopped spinach
- 8 oz cream cheese
- 1/4 cup olive oil
- 1/4 tsp salt and pepper or to taste
- 2 eggs
- Italian bread crumbs
Instructions
- Combine spinach, olive oil, salt and pepper, cream cheese and Parmesan cheese in your favorite food processor.
- Cut chicken breasts on thin side making an opening and stuff with above ingredients.
- Dredge chicken in egg and then in bread crumbs and sauté one side until brown
- Place on baking sheet browned side up.
- Top chicken with any leftover spinach mix
- Cook at 400 degrees for about 40 minutes
- Cut breasts in half after removing from oven.
- Enjoy!
