A favorite Romanian potato salad recipe from our Romanian friend, Adriana.

Ingredients
8medium Yukon Gold potatoes3 pounds
1/4cupapple cider vinegar
1/4cupolive oil
1medium red oniondiced (about 1 cup)
2tablespoonsDijon mustard
3Tbs.capers
1redyellow, or orange bell pepper, diced
4stalks of celerychopped

Directions:
Scrub potato skin and chop into bite sized chunks. We never peel our potatoes since the skin contains important nutrients, however, if you don't care for that you can peel your potatoes before steaming.
When potatoes are tender (to a fork and/or taste test) place them in large mixing bowl. Add cider vinegar and olive oil.
Sauté onions in a little of the olive oil. Cook for 3 minutes, stirring often, until onions are barely soft.
Add onions to potatoes along with mustard, capers, bell pepper, and celery. Season with salt and freshly ground black pepper to taste.
Stir, serve and enjoy with your favorite picnic foods, or Romanian Mititei.
