Perfect for a busy night, this pear Gorgonzola pizza with arugula will soon become a family favorite
Ingredients
Fine yellow cornmeal
All-purpose flour
1lbpizza dough
2Bartlett pearshalved, cored, and sliced ⅛ inch thick
3tbspextra virgin olive oilplus more for drizzling (optional)
1tspkosher salt
1/2tspfreshly ground black pepper
2/3cupcrumbled gorgonzola cheese
1cupbaby arugula
Instructions
Preheat the oven to 450°F. Sprinkle 2 large baking sheets with a light dusting of cornmeal. Lightly flour the work surface.
Separate the pizza dough into 2 equal pieces. Roll out each piece of dough into a 10-inch circle and transfer it to a prepared baking sheet. Layer the sliced pears evenly on the 2 pizzas, leaving a ½-inch border all the way around. Drizzle the olive oil evenly over the pizzas and sprinkle the salt and pepper over the top. Bake until the crust is just starting to turn golden brown, about 10 minutes.
Sprinkle the crumbled gorgonzola cheese all over and top with the arugula and an additional drizzle of oil, if desired. Serve immediately.
