Broccoli & Onion Casserole

Ingredients

  • 1 lb broccoli chopped small
  • 2 cups onions chopped small
  • 2 Tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 3 ounce package cream cheese (sit out to soften)

TOPPING

  • 1/2 cup cheddar cheese shredded
  • 2 Tablespoons butter
  • 1 cup dry breadcrumbs

Instructions

Directions:

  • Cook chopped broccoli and onions until tender. Drain and set aside.
  • Preheat oven to 350°F
  • In a saucepan, melt 2 tablespoons butter, stir in flour, salt, and a dash of pepper.
  • Add milk; cook and stir until thickened and bubbly.
  • Add cream cheese; cook and stir 1-2 minutes then stir in cooked broccoli and onions.
  • Pour and spread into a 1-1/2 quart casserole dish. Top with cheddar cheese.
  • Melt remaining 2 tablespoons butter and toss with bread crumbs. Sprinkle over casserole.
  • Bake at 350°F for 35-40 minutes.
  • Enjoy!

Notes

VARIATIONS:
FOR DIP & SPREADS: To make this into a delicious dip for chips, or spread for crackers, chip cooked broccoli and onions in food processors before adding it to the cream cheese mixture.
