For a hardy and richly flavorful Herbs de Provence, this is our 'Superb blend" that you can have ready in about 10 minutes or less. If you don't have all of the ingredients, no worries. Blends are forgiving , so long as you have the most basic of herbs for a given cuisine. See the Basic Herbs de Provence recipe for that list, posted above this in this same article.
This is a large herb blend recipe that yields 1 cup (+ 1 teaspoon) of Herbs de Provence. So you'll need a larger (8-10 oz) spice jar, or else make it in a large mixing bowl measuring cup with pour spout like this by OXO.
Since this makes a large quantity, it's best to mix it in a bowl to facilitate easy blending. Then pour into one large or two small spice jar/s and label them.
Notes
Making Herbs de Provence With Fresh Herbs
If you're growing herbs, then make it using fresh herbs for the very best flavor. In which case you'd moderate the quantity to be something you can use up for a meal or within a few days max.
Fresh Herbs to Dried Herbs Ratio is 2 to 1
Whenever using fresh herbs, you'll need double the amount of dried. While the fresh have a more potent flavor, dried herbs are a more concentrated quantity and flavor because the water content is removed but the flavor remains concentrated and undiluted. It's the same way a raisin is more intensely sweet and flavor packed as compared to a grape.
