Instructions
Pre-freeze your ice cream maker freezer tub if you're using the automatic, ice cream makers that don't require ice and salt.
Add all 3 ingredients to a blender and blend. Blend less if you prefer some fruit chunks; longer if you want it smooth, (or you can blend smooth and stir in some fruit chunks as you pour liquid batter into freezer tub.
Pour into a pre-frozen ice cream maker tub, (or according to mfg instructions if using an old fashioned ice cream maker that requires ice and salt).
Notes
Quantity
This makes 4 portions at about 1 ⅔ cups each serving (~3 scoops), which fills one 2 qt. ice cream maker freezer tub.For more, simply double the recipe, however, you'll need to make it in 2 batches if using a 2 qt. machine, of use a 4 qt. ice cream maker that utilizes salt and ice.
Ratios and Proportionate Adjustments
For more intense flavor, use more fruit (or less yogurt).
Honey
We try to use less sweetener whenever possible. When making homemade frozen yogurt with tarter berries, you can add up to ⅔ cup honey or to taste. However, for sweeter fruits like mangoes, we find that ⅓ - ½ cup is best
Other Sweeteners
We prefer honey but you can use sugar or stevia if you prefer. We tried it with maple syrup, but it never froze fully to a creamy texture in the ice cream so it then froze hard in the freezer, so honey is better to work with.
Storage
Homemade frozen yogurt tends to freeze hard if left in the freezer overnight. However, you can always set it out on counter for about 10 minutes before serving to help soften it up. You can also cut slices out of the hard frozen batter and serve as slices into a shallow bowl instead of scoops.
