Ingredients
1small zucchini
1/4cupseasoned Italian bread crumbs
1/4cupof flour
seasoning blend of your choice
1egg + 2 tsp waterbeaten
Olive oil pump spraynot aerosol!
Instructions
Use a mandoline slicer or knife to cut the zucchini into thin "chips."
Prepare two small bowls for dredging the zucchini. One bowl will hold the beaten egg and one for the bread crumb, seasoning, and flour mixture.
Dip each zucchini round into the egg mixture and then dredge it in the flour and bread crumb bowl. Shake off excess and lie them in a single layer in your air fryer tray.
Air fry at 375 for 10 minutes. Check about halfway through the cycle as cooking time may vary based on the moisture content of your zucchini.
